Cornflour fatless sponge

Ok so this one I found on the Delia website forums.
2 eggs, separated,
3 oz cornflour
1 level tsp cream of tartar
1/2 tsp bicarb
3 oz caster sugar
1tsp plain flour

Sift flours and raising agents
In another bowl beat the egg whites til stiff and glossy then gradually add the sugar. Then add the beaten egg yolks gradually. Gently fold in the flour mixture, sifting again.
Pour into 8 inch cake tin and bake at gas mark 5-6 for 16 to 20 mins.

 

results:

DS2 said it’s not as good as the last cake but still good. DS1 loved it when plain icing was added.

There’s a firm yet light texture and a slightly custardy flavour and smell. The addition of the small amount of plain flour makes it not wheat free, I wonder if it would work without it? Or maybe rye flour, which I can take.

  2. I sympathise with your friend, it’s a hard life you have to be so careful,checking all the labels etc. I’m not a coeliac, just sensitive and I can get away with a bit of wheat. Plenty of good gluten free blogs out there tho’.

    i do pass a Morrison’s on the way to work, so I may drop in if I’m not running late for a change!
